Ah, you wondrous magician of slow heat, Italian wood barrels, damp attics, and age, you, you--grape juice. Also known among the balsamic world as "must", the juice of grapes has been hiding in the attics of Italian families living in Modena for centuries. It's only been since the early 1980's that traditional balsamic vinegar has been somewhat available to those outside the region of Emilia-Romagna. Now anyone with a discerning eye to the label can taste the potential of grape juice after it has been transformed into balsamic vinegar. We offer two types- "Tradizionale,"and the first organic Balsamic Vinegar of Modena, "Aceto Balsamico di Modena". The difference between them, besides price, intensity, consistency, and complexity, is Tradizionale has been aged a bit differently and longer, becoming certified by a consorzio of master tasters. However, both, to our tongues, are unsurpassed in quality.
