Oleificio Viola is a producer of olive oil located in Bardolino, near Lake Garda. Olive trees have been cultivated near the lake for over 1,000 years. The land was suited to the needs of the trees, and the monks who planted them used the resulting oil in religious rites and for light.
All of the land is under organic cultivation as this helps reinforce the natural defenses of the plant and protect the environment. Additionally, it insures good flavor and beneficial effects for consumers.
During the harvest three varieties-Nostrano, Favarol, and Grginano- of only the most healthy olives are picked by hand at the right moment and immediately pressed at the frantoio (olive pressing facility). A modern system of extraction is used to minimize any heat generated during the process; this insures that all the beneficial qualities of the olive will be found in the oil that is produced.
Garda oil, typically, has a color that can vary from green to a golden yellow; the perfume is delicately fruity like its flavor, with a very slight bitterness, and the aftertaste is characteristic of sweet almonds.
This oil has always been appreciated and sought out for its lightness. Use it on bread, various types of bruschetta or fresh salad and grilled vegetables, and it is also recommended for cooking as it is easily digestible. Powered by GMaps and Google
